We had the loveliest brunch yesterday, and it was such a nice way to transition into the new week and overcome the Sunday scaries.

If you know me, you know the kitchen is the heart of our home, and there is nothing more we enjoy than gathering with friends, preparing meals, and sharing stories.

This Sunday, we had Huevos Rancheros with home fries, bacon, sausage, and freshly baked croissants. I chopped the tomatoes, onions, peppers, and potatoes ahead of time to keep things easy and cleanup simple for when our guests started to arrive.

Then, we cooked, sipped, and laughed through the morning.

If you want to shop the look, I have included some recommendations below. Also the recipe for the Huevos Rancheros.

Shop the look

Enamel Pan (we have focused our cookware to be teflon free) by Riess. This brand we found to work on many cooktop types. Find on amazon HERE.

Stoneware Plates. Our plates we purchased years ago. I love the little lip on them that prevents any part of the meal from sliding off. A similar plate is linked HERE.

Drinking Glass. These pink drinking glasses are my favorite. A subtle hint of everything girly that I love while still being appreciated by the men in my house. Find on amazon HERE.

Barstools. Another subtle shoutout to the femine touch in our kitchen. I have scotch guarded these chairs to protect them from the little hands that use them daily, and they have defintely held up. The exact bar stools I purchased 3 years ago, so a similar style I can recommend can be found HERE.

Recipe Huevos Rancheros

  • Cilantro, garlic powder, chili powder to taste

  • 2 tbsp butter

  • 1 white or spanish onion diced

  • 2 red bell peppers diced

  • 6 Plum tomatoes

  • 4-5 eggs

  1. Heat pan, and add butter. Cook in onion and pepper until softened.

  2. Add tomatoes to the pan and mix well for about 5 minutes.

  3. Mix in the spices to taste and allow to simmer for 2 minutes.

  4. Create small holes in the mixture to crack the eggs into.

  5. Cover the pan and cook with low heat until the eggs are as you desired (runny yolks are about 5-7 minutes)

  6. Add cilantro to taste and serve with crispy bread for dipping.
